Chocolatiers = Chefs that make things from chocolate, using techniques including tempering, molding, and sculpting.
Chocolate makers = People who make chocolate starting from the beans.
Chocolateers = As opposed to chocolatiers, chocolateers are chocolate enthusiasts with no particular expertise in chocolate other than lots of experience eating it.
